Found a way to do this but it's still a bit ugly. There's a -prefix option for lamboot and lamwipe so you can do this: lamboot -prefix /usr/common/lam_mpi [etc.] and then it looks in /usr/common/lam_mpi/bin to find the lam binary it's trying to run, hboot for lamboot or tkill for lamwipe.
